My Speedy Bread with Yeast Dough, but No Rising Time

Dear Ines, thank you for your reply. I just stumbled across a video on YouTube that shows what a difference this makes for rolls. That’s probably one of the secrets of bakeries. I’m really glad you shared this tip with me. I wouldn’t have thought of it otherwise.

Have a wonderful rest of your Sunday!

Ina, I really like the colors of the jacket for your friend. Those are the kind of colors my friend likes, too. You’ve made great progress again, and all while tending to the garden.
I’ve seen fans like that before, too. It looks pretty.

Things aren’t moving quite as fast for me right now. Now that I’ve finished the hat for Linja, I’m going to start on the one for Juna right away. It’s getting cool again, so both girls can try out their hats soon.

My Speedy Bread with Yeast Dough, but No Rising Time

Ines, I looked up baking malt online today. Wow, it’s amazing what a difference it makes to the result. I hadn’t even heard of it before. Do you think the bread will turn out just as nice and crispy with the syrup?

I ordered the baking malt from our organic grocery store for the next delivery on Wednesday. I’ll probably wait to make this bread until it arrives and will bake some bread with baking ferment for now.

Thanks for the tip about the malt! :) We’re going to use it to improve our rolls, too.

So, I’ve now finished the blue hat and can show it to you. It looks cute from both sides. The dark blue yarn, however, is alpaca and has a slightly longer yardage. You can see that a little bit, but it’s not a big deal. Unfortunately, I didn’t have anything else in my stash.

This is what it looks like now, and I hope it fits Linja.

Since I’m on a roll, I’ve decided to start the same red-and-white hat for Juna right away. I still have Drops Flora in both colors in my stash. I’m sure it’ll look great, too.

Have a wonderful Saturday evening!

Bakery

Mmm, so delicious! :)
I have a recipe like that, too, where you stir apples into the batter. The cake turns out super moist and is really tasty. My mouth is literally watering just thinking about it.

I was actually planning to bake Ines’s quick bread this weekend. But now that I’ve seen what baking malt is good for, I’m going to wait until I get it delivered on Wednesday from our organic grocery store. By the way, it’s also easy to make yourself—I just don’t have any grains on hand right now.

Then tomorrow I’ll start a batch of bread with sourdough starter; I haven’t done that in a long time either.

Ines, thank you. I’ll bake the bread this weekend and will post a photo then. I’m really looking forward to it. I don’t have malt, but I do have maple syrup. I’ll just have to make do.

Have a wonderful day, everyone! Spring is peeking in...

Oh yes, Andrea, that really does make a difference. It’s worth it for you—you crochet quite a lot. I get along just fine with mine. I have a bent one like that, too, and I like using it.

Do you soak the Römertopf beforehand, or do you put it in like that—with parchment paper?

Yes, Christina, that hat would look really cute on boys, too. I’m going to knit the same one again in red and white for Juna. There’s still time until next fall. But I’ll probably have it finished by her birthday in May. That way, both of them will have matching hats.

PC migration… it took until late at night just to get all the data onto the external hard drive. Now I’m already writing from the “new” one, but I still have to transfer all the data to it. And I’m busy sorting through and deleting things. For some reason, I also feel like decluttering everywhere and giving things away. I’ll be posting quite a few items on my swap platform.

Well, it really feels like spring. I’m going to drive over to the farmer just around the corner in a minute and bring back a few flowers. While I’m there, we’ll pick up our vegetables, too.

Ines, I’m really looking forward to seeing your new bathroom!

I wish you all a pleasant weekend and hope you’re all healthy—or will be soon.

Plastic-free: How are you doing with that?

We get our groceries from our organic grocery store, and they only provide paper bags—or they pack our items directly into our own containers. I bake my own bread and rolls, and I also make my own yogurt and almond milk. The ingredients for those are stored in glass jars. And when I go shopping at the market or at the farm, it’s not an issue either.

I’m cutting back on plastic more and more. I haven’t needed plastic shopping bags for a long time now—I have my own bags and baskets.

The only downside is that some items delivered online are wrapped in too much plastic—printer cartridges, for example.

Our yellow recycling bin is almost empty, and so is the regular trash can. Most of our waste is compostable, and that goes first into the bokashi bucket and then into the garden.

Thanks for your feedback.

Andrea, your granny squares look really pretty, just like everything else you crochet, including the flip-flops. What’s so different about the hook?
Luckily, the snow’s gone here and little flowers are starting to sprout everywhere.

Sandra, Chicken No. 10 is just as cute as all the others. Well, it’s going to be quite a clucking party over at your place. All that’s missing is the rooster. :-)

Marion, I’m also looking forward to seeing your blanket. You’re so tireless and always finding something new to work on.

I’m taking it a bit slow for now because I have other things to take care of. For example, I’m transferring everything from my 11-year-old computer to a newer one that my husband gave me. He inherited an almost-new one from our friend’s late husband. I’ve been working on it all day today—it’s really a lot of work.

At least I’ve knitted the hat high enough that the pattern is finished. It looks really cute with the little mouse. Now I’ll keep knitting upwards.

Ruth, the chick turned out cute. That sponge yarn wouldn’t be my thing to work with. I need it to be cozy and soft. But a hand-crocheted sponge like that—it really has something special.

Christina, your Nala is so funny. She gave you a peaceful evening of knitting while purring on your lap. Now that’s quite an achievement.

Ina, that orange-yellow yarn is a dream. I have some similar yarn in my stash, too, but I’m not sure what to make with it right now. I’m sure you’ll have a great idea—or get one here.

Sonja, I really have to laugh now. My husband always confuses crocheting with knitting, too. Even though I’ve explained the difference to him, he still says, “You’ve done a great job crocheting that again.” ;-) Yeah, yeah… our men. But he does know his way around screws and tools.

Your hat is so cute. Now I can finally see what it looks like knitted in wool. I’m already curious to see how it’ll turn out for me.

Yes, dear Ina, now you can already see Sonja’s hat pattern. I get to do a test knit again and I’m really looking forward to knitting this cute hat for Linja. She’ll definitely be happy. I’ve finished the swatch and will start on the hat tonight. Since Linja’s favorite color is blue, it’ll be light blue with dark blue. Luckily, I still have enough yarn in stock.

Oatmeal Pizza—delicious, healthy, and quick to make

Ever since I started making pizza dough with oatmeal flour (or oat flour), I’ve been so thrilled that I’ve declared this dough my favorite. By the way, it’s also a great way to use up leftover vegetables.

The dough has the following advantages:
  • It’s easy to spread onto the baking sheet.
  • It doesn’t need to rise.
  • It’s nice and thin and crispy.
  • It’s also very easy to digest and, depending on the type of oats, even gluten-free.
  • And it’s all done in a flash.
Here’s the recipe I’ve experimented with a few times and have now perfected.

Dough ingredients for one baking sheet (use half for a pizza pan):
  • 200 g rolled oats
  • 200 ml lukewarm water (it must be lukewarm)
  • 2–3 tbsp olive oil
  • 1/2 tsp baking powder
  • a pinch of salt
For preparation:
  • A blender to grind the oats
  • Hand mixer
  • Baking paper for the baking sheet
Ingredients:
  • Tomato paste
  • Vegetables, e.g., leeks, spinach, bell peppers, tomatoes, mushrooms, onions, garlic, etc.
  • Pepper, salt, and pizza herbs
  • Cheese topping (or vegan alternative)
Preparation:

  • The oats must be finely ground in a blender. This takes just a few seconds.
  • Then mix all the ingredients together to form a relatively thin batter. Spread this onto the baking sheet.
  • First, spread the tomato paste on top. You can carefully spread it over the dough with a spoon.
  • Next, arrange your choice of vegetables on top.
I like to use some leeks, spinach, and mushrooms, and finish with a few tomato slices (you can skip this step).
  • Chop the garlic finely and sprinkle it on top.
  • Sprinkle herb salt, pepper, and pizza herbs on top.
  • Finally, sprinkle some grated cheese on top (a vegan cheese alternative works great, too).
Baking:
Place in a cold oven and bake at 190 degrees on the convection setting and (if possible) on the pizza setting for 25 minutes.

The dough is very thin and turns out nice and crispy (on the pizza setting); it tastes delicious, is quick to make, and, above all, is very light and easy to digest. It’s also low in gluten or gluten-free.

Note / Experience:
In my experience, the crust turns out even crispier with freshly ground oats. However, you’ll need a high-powered blender that can grind the oats very finely.
If you use canned pizza tomatoes as the first topping instead of tomato paste, the crust might not turn out as crispy because the toppings make it too moist. It still tastes delicious, though.

Unfortunately, I couldn’t get a better photo that evening. It definitely looks delicious and tasted that way, too.

I hope you enjoy making this recipe! :)

Monika

Marion, that’s such a great comfort blanket. It’ll surely be a joy to give as a gift and will be loved dearly.

Sandra, you’ve been busy again. The coasters look great. I’m looking forward to the next chicken.
You can take your husband’s comment however you like… in any case, he’s practical.

Ina, it’s great that you were able to bring those felt shoes back to life.
Please don’t ever say again that I’m a fast knitter. ;-) Because you outdo all of us here. The speed at which you finished your jacket is practically record-breaking. And it’s so long, too! On top of that, you’re still crocheting your temperature blanket and surely doing lots of other things as well. I really can’t keep up with you.
Your jacket looks super cozy. That yarn must be a dream.
And thanks so much for the gauge. I’ve already made a note of it. If I ever misplace my counting frame, I’ll come back to it.

I just finished the little summer sweater for Sternchen—it matches her diaper.

Now I’m knitting a hat for Linja’s birthday. I’ll show it to you when it’s done. I just started a gauge swatch.

Have a wonderful day! The first starlings have just flown in here... :) Spring is on the horizon.

Your favorite yarn and color

It’s not like I don’t still have enough yarn ... it’s just that it isn’t enough for what I’d really like to make. Or it’s not the right color.

I actually managed to make it to 1 1/2 years back in May. I definitely want to get to that point before I redeem a gift card.

I still have plenty of colorful cotton too, and I’ll think about what else I can make from it. It’s perfect for summer, after all.

Oh dear, this makes me sad, too. I, too, love Elisabeth’s videos and appreciate her very much—and she was a huge help to me after I took a break from knitting a few years ago. I learned a lot from her, and I’m very grateful for that.

African violets

Wow, 10 years is really impressive, and it’s blooming beautifully. I used to have a lot of Usambara violets. They’re super easy to propagate—just stick half a leaf into the soil, and a new plant will grow from it.
