Bakery, Part 2. (No advertising)



Since quite a few people bake, I’ve opened the bakery.

The recipes could go here.

vegan mango yogurt muffins

Ingredients for approx. 10 muffins

  • 250 g mango yogurt (Luve)
  • 150 g flour (405)
  • 100 g sugar
  • 1/2 tsp baking soda
Preparation

Mix the dry ingredients and stir in the yogurt.
Divide the batter among muffin cups.
Bake at 150° C (convection) or 170° C (top/bottom heat) for approx. 12 minutes.

Marlene, thank you. I always enjoy trying out vegan recipes.
If you ever bake these, please show us a photo of them. I’ll do the same as soon as I have them on the table. It might take a while—right now I’m taking a little break from cakes and the like.

I have a question about baking soda. Do you generally use that instead of baking powder? I’ve heard that a lot. It would be great, of course, if it works just as well.

Marlene, I looked up “Lughurt” online right away. That sounds very interesting to me, since we’re trying to cut back on cow’s milk products.

I’ll have to check at our local supermarket to see if they carry it.

About baking soda: I’ve always used it in combination with other leavening agents—never just baking soda on its own. Yesterday I made muffins with olives and sheep’s milk cheese. 1 tsp baking soda, 2 tsp baking powder. They turned out really light and fluffy.

Hmmm ... Petra, Muffins mit Oliven und Schafskäse, das hört sich auch lecker an. An so einem Rezept wäre ich auch interessiert. Den Schafskäse könnte ich gut ersetzen.

Leider schon gegessen.
Aber das nächste Mal mit Foto.

Ich verwende fast ausschließlich Natron, da ich das eher vorrätig als Backpulver habe.

Ich fahr ja.nun nicht extra für Leckerchen zum einkaufen 🙈
Also kurz eine Dose Thunfisch in Öl, mit 100ml Wasser verrühren, 100g Maismehl und 150g Vollkorn Mehl dazu und das ganze für 30 min bei 150-180 Grad in den Ofen.... 
Mein Mann hat beim letzten mal "versehentlich" probiert... sein Kommentar : es fehlt ein bisschen Salz" 😂
Hab ihn dann aufgeklärt.... jetzt nascht er nur noch wenn er vorher genau weis,was ich da gemacht hab....

It’s funny—I can’t help but laugh. My husband can’t wait until coffee time either and likes to take a bite as he walks by. But we don’t have any pets that eat cookies—so there’s no danger.

😂🙈 naja, in den selbstgebackenen Keksen sind ja nur "gute" Sachen drin.... 
Er  hätte bestimmt auch mehr genascht, nur der Gedanke das die für den Hund sind hat ihn gebremst. Also mit salz würden die glatt als abendliches knabberzeug durchgehen....

Ich hab auch mal wieder gebacken. Da die Amerikaner alle weggenascht sind, musste Nachschub her. Apfelkuchen mit Streuseln
Falls jemand Nachbacken moechte, sagt Bescheid, dann kommt das Rezept nach.

I use a standard sponge batter

150 g sugar
150 g margarine
3 egg yolks (egg whites at the end)
1 packet vanilla sugar
1 packet pudding mix
200 g flour
1/2 packet baking powder
3–4 tbsp milk
3 medium apples, sliced
A little lemon juice and cinnamon

Mix all the ingredients and pour into a springform pan. Place the apple slices on the batter, drizzle a little lemon juice over them and sprinkle with cinnamon

Crumble topping:

100 g flour
75 g margarine
1 packet vanilla sugar
75 g sugar

Bake at 150–160°C until golden, about 20–30 minutes or longer depending on the oven

Petra, thanks for the link to the olive muffins! They’re on my to-do list.

Stephanie, that sounds really delicious. We could bake those for ourselves sometime, with spices and salt, of course.

Oh, Andrea, apple cake with crumble topping!! You’re giving me new ideas again... right now I’m still working on the American ones; tomorrow will be the last ones. Then I’ll take a few days off, and we’ll have something delicious again.

Dear Marlene, yesterday we found the yogurt you mentioned, and today I tried your recipe.

We tried one while it was still warm, and it was super delicious. We’ll have the rest of the mango muffins with coffee at lunch today.

Vegan.... How about some crunchy granola....

125 g sugar beet syrup
50 ml canola oil
50 ml water
Stir vigorously! Then:
500 g old-fashioned rolled oats
50 g sunflower seeds
25 g ground flaxseed
50 g sesame seeds
100 g walnuts (I use almonds, I don’t like walnuts), chopped
Mix the dry ingredients in a bowl, pour the syrup over them, and stir well.
Spread the mixture onto a baking sheet and put it in the oven at 180°C on the convection setting; don’t forget to preheat. Bake for about 15 minutes, “turning” it once about halfway through.... Let it cool, then into the container it goes....

Oh man, how mean. You all have such lovely cakes — I deliberately didn’t bake anything today.

But I think I’ll have to get to it after all, by tomorrow morning at the latest.

My coffee will have to taste good without cake today.

Andra, I have to say, you’re such a sweet tooth too, aren’t you? That looks absolutely delicious.

My husband asked for the sheet gingerbread again today. So I decided to try the marzipan version. Soooo delicious!! I’ve added the variation to the recipe thread. Here’s a photo to round out our coffee and cake session.



Marion, I’m sure you’ll have some delicious cake tomorrow, too—knowing you. I take a break every now and then, too. It does you good. :)

One cake is more delicious than the next.

Akela, your apple crumble cake looks really delicious—and it rose so high! Or did you use more crumble topping? Yum, yum, yum.

Monika , exactly—I’m a real sweet tooth, too. Anything sweet—and you can’t even tell by looking at me yet. My husband always licks the bowl clean, so I have to leave a little extra in there than usual.
Do you use raw marzipan? I can buy that here too—it would be perfect for my husband. I don’t like it myself. I’ll have to check out your recipe right away. Thanks in advance.

Bastelfan, I chopped the apples instead of slicing them, and my crumble topping is actually meant for a large cake, but since I know my husband loves this kind of crumble, I put a little extra on top :-)

So, mein Sonntagskuchen ist auch  fertig. Es ist ein Zwetschgenkuchen mit Zimtstreuseln geworden.
Das Obst ist vom eigenen Baum.

Oh Marion, I’d love to try a piece of that. This is quite the baking extravaganza here. We could all enter a baking contest together—at least virtually. ;-)

Andrea, I ground almonds with apricot kernels and added them to the batter. Bitter almond oil works in a pinch, too. I haven’t tried it with raw marzipan yet. It’s worth a try.

My husband whispered the next variation to me yesterday. He loves Black Forest cake. So next time, I’m going to make a variation like that using the sheet gingerbread. It’ll be baked with cocoa and have cherries in it. I can already imagine how delicious that’ll be.

Now you’ve made my mouth water again… and I’m about to serve up our gingerbread. Yum yum...

Au ja Monika. Schwarzwälder Kirschtorte/Kuchen. Auf das Rezept bin ich schon gespannt.
Wir sind schon ein paar verrückte Kuchentanten, aber lustig.
Ist es vielleicht so ähnlich, wie die Donauwelle, heißt die so, mit Kakao-Teig, Kirschen drin versinken lassen, Buttercreme und dann Schokoglasur drauf. Eine echte Kalorienbombe, aber verdammt lecker.

Ich stell mir nur grad vor, wie wir alle zusammen so einen Kuchenbasar veranstalten. Jeder bringt seine gebackenen Kuchen/Torten mit, und aus dem Erlös gönnen wir uns alle was Schönes.

Herrlich dieser Backstuben-Thread, denn ich probier in Sachen Backen gerne mal was Neues aus.
Da sind wir alle gespannt, Monika, Danke Dir schon mal.

Marion, mmh sieht Dein Kuchen lecker aus. Ich mag Zwetschgen, aber den kann ich hier nur saisonbedingt backen. So Obst in Gläsern fertig fürn Kuchen, kriegste hier nicht, und TK-Obst minimale Auswahl, Leider.

Dann lasst es euch schmecken.
Wir sind fertig mit Kaffeetrinken, und der Obstboden ist ratzeputz alle. Eine Hälfte Samstag, die andere Hälfte heute.

Thanks, everyone. There’s a funny story behind the truck:
a friend asked if I could bake a truck for her son Max’s 3rd birthday. So that’s exactly what I did. They were about to have coffee with the grandparents. The knife was brought out, and then all hell broke loose. Max defended his truck tooth and nail, and the birthday party guests ended up getting only cookies.

The ambulance was for my German Red Cross (DRK) instructor. The man could talk a mile a minute and had a clever answer for everything. As a thank-you for our training course, I baked him the ambulance cake. (He had bought an old ambulance and converted it into a camper van himself.)
After the last break, the cake was sitting on his table. He stood in front of it—with tears in his eyes—and simply said, “Do I have to say anything?”
That made me, so to speak, a “one-of-a-kind” person—someone who had managed to leave Wolfgang speechless.

Marlies, das sind ja tatsächlich Kunstwerke. Danke, dass du uns die Geschichten dazu erzählt hast. Die sind wirklich sehr schön. Du bist damit ja eine Wunscherfüllerin in punkto Kuchen. Sowas spricht sich leicht rum, kann ich mir vorstellen.

Andrea, ein Kuchenbasar, tolle Idee! Hier zumindest mal schon virtuell. Ich hab mich gestern am Kuchen überfr... und werde jetzt erstmal was einfrieren. Hätte ich nicht gedacht, dass ich erstmal mit Süßem gesättigt bin. Zumindest bis zum nächsten Wochenende. ;-)

Also ich backe eigentlich nicht so gern. Liegt vielleicht daran, dass ich auch nicht so eine Süße bin 😂  Aber dank Corona (Anton muss ja beschäftigt werden und mein Mann liebt Kuchen) backe ich doch häufiger als früher. 

Gerade ist der Apfelkuchen von Andrea fertig geworden.  Riechen tut er gut. Den gibt es heute als Nachtisch .


Marlies... deine Kuchen sehen toll aus und die Geschichten dazu waren sehr schön. Die Lkw Geschichte würde bei uns wahrscheinlich auch genauso passieren 😀... aber ich bin schon froh, wenn ich einen Rundem Kuchen hinbekomme.

Marlies, deine Torten sind wirklich Kunstwerke und die Geschichten dazu wunderbar! Ich backe zwar auch sehr gerne, bin aber nicht so kreativ, aber meine ältere Tochter zaubert für die Kindergeburtstage jeweils auch so tolle Kuchen und die jüngere hat für die Hochzeitstorte für ihren Bruder kreiert:

Amerikaner könnte ich auch wieder backen, Akela.

Marmorkuchen nach dem Rezept von "cakeinvasion ist bei uns sehr beliebt.
Der Kuchen lässt sich gut abwandeln:

  • Rosinen oder getrocknete Kirschen
  • als Gewürzkuchen
  • Kokosraspel
  • mit einem Teil gemahlene Nüsse statt Mehl.

Inge, yours look just like the ones you’d get at a bakery. Great! Yeah, they’re so delicious that they disappear quickly. I could eat some more right now.

I like the recipe for the apple clouds—it’s so quick. We’ll see—maybe I’ll bake those next. They sound very tasty, anyway.

Just finished, and now this delicious Bobbel is going straight to our winter barbecue. My father had the idea over coffee to fire up the grill and make bratwurst. Well, anyone can do that in summer, so now we quickly needed some bread or rolls.....

Herb Bobbel Bread

Ingredients

500 g spelt flour; whole-grain spelt flour also works
1 packet dry yeast
1 tsp salt
1 pinch of sugar; I use coconut blossom sugar
2 tbsp oil, canola oil
300 ml lukewarm water
50 g herbs of your choice; I prefer rosemary because of the aroma


Instructions

Put the flour, salt, and oil in a mixing bowl
Mix the dry yeast well with the sugar and water
Add all the ingredients to the bowl and knead well
Cover the dough and let it rise for about 45 minutes
Grease a round baking tray, 30 cm in diameter, shape small balls of about 15–20 g, and place them next to each other
Let rise for another 15 minutes
Brush the balls with a little water.
Bake at 180 °C convection for about 20–25 minutes. Depending on the oven, 20 minutes may be enough.

Personally, I’m always bothered by the rising time, but here the result is what counts, and that’s why we like them so much

wie das hier wieder duftet

mmh lecker, Monika, ich komme vorbei. Eure Brötchen sehen ja lecker aus, mit Körnern, so lieben wir sie. Sehen ja bald so im Original aus, wie wir sie hier in der TK-Abteilung kaufen können.
Eure sind aber frischer und leckerer.

ines, Dein Kräuter-Brot sieht ja lecker aus. Sind schon interessante Zutaten, hier in Norwegen gar nicht so einfach zu bekommen. Muß oft improvisieren.
Dann guten Hunger, und viel Spaß beim Grillen. Ist mal was anderes, als nur im Sommer, das kann ja jeder :-)

Ines, dein Bobbel sieht sehr gut aus, erinnert an ein Partybrot. Eigentlich wollte ich übers Wochenende Maisbrötchen backen… vielleicht komme ich morgen dazu.
Auch deine Brötchen, Monika, verlocken zum Zugreifen. Welches Mehl steckt da drin?

Christina, sie sind mit Dinkelvollkornmehl gebacken. Wir haben lange am Rezept rumprobiert, bis es gepasst hat. Jetzt sind wir vom Ergebnis absolut begeistert. Wir haben sie auch schon als Partysonne gemacht, dann sind es nur kleinere. Bis jetzt hat jeder Besucher sie auch gerne gegessen. 

Ines, dein Brot sind ja eigentlich auch Brötchen, die aneinander gelegt werden. Das Rezept klingt super, werde ich auch mal ausprobieren.

I’ve planned to make the apple clouds this weekend. Few ingredients, and it sounds like they’re quick to whip up.

Ines, we’d love your Bobbelbrot, too. I especially think these little rolls you can break off are pretty to look at. Winter barbecuing—great. We did that last year, too—our son-in-law is a grill master and really, really enjoys it. Because of all the restrictions, we haven’t been having our Thursday family evening with dinner together at the moment—actually, not since November. How I miss that family time. Ines, I’m so happy for you guys that you had such a great barbecue evening.

That really makes you hungry. Add some butter and jam, and it’s perfect.

A little tip—you can also use this dough to bake bunnies at Easter.

I had to search for your recipe here in the forum again. I’d forgotten to write it down.

Since I didn’t have anything to go with my coffee, I quickly baked some. My husband will be home soon, and then we’ll really enjoy them.

I used half of the yeast dough recipe to bake a braided loaf. With the rest, I made crumble pastries.

They turned out delicious—we’ve already tried them.

Some are already missing from the picture. My niece stopped by briefly and got to try some right away.

Inge, your marble cake looks delicious. And so do your braided loaf and the crumble pastries, Marion.

I baked one of my favorite quick recipes again today. Apple cake without sugar and with a very thin base. It also has bananas, raisins, and raspberries on top. And then I did an experiment today. I topped it with a nut crumble that I sweetened only with coconut blossom sugar. Wow, it’s so incredibly delicious—we’ve already polished off almost half a baking sheet.

Over the weekend, I baked Akela’s apple clouds. They were very delicious.




Yesterday I made the same batter again and, instead of apples, I stirred in peanut butter—to make cookies. My sweetheart loved them.

Just today I also found a video about baking bread. Was it a Russian video, and did it require a lot of prep time?
It was more along the lines of white bread. It was pretty interesting. The guy in the video managed to bake two loaves.

ne, da ist normales Weizenmehl 600Gramm drin,etwas Olivenöl, 30ml,10Gramm Hefe, 8Gramm Salz und 340 ml lauwarmes Waaser das ganze mischen und beim kneten immer wieder den Teig falten bis er geschmeidig ist. Dann den Teig 1Stinde gehen lassen in der Schüssel, dann nochmal kneten und falten,in drei gleichgroße Stücke teilen, dann die Teigteile wie für eine Pizza ausbreiten, dann Rollen und auf ein Blech legen, so mit allen drei Teiglingen verfahren, nochmal 20 Minuten auf dem Blech gehen lassen. Bei 200Grad 30 Minuten backen, guten Appetit

Dankeschön, Akela, für das Rezept. Klingt gut. Werde ich demnächst mal ausprobieren.
Ich nehme aber diese Trockenhefe. Kann ich auch normales Sonnenblumenöl nehmen?

Dein Marmorkuchen sieht voll lecker aus. Den möchte ich auch gerne mal nachbacken.
Nachmittagskaffee ohne Kuchen, geht gar nicht.

Ich bekomm gleich Hunger auf eure leckeren Sachen.

heute mal ein Apfelkuchen der einfachen Art, einen Rührteig gemacht, beim Grundrezept reicht ein großer Apfel oder eben 2 kleine, geschnippelt und unter den Teig gehoben, in eine Springform und bei 160° 40 Minuten backen lassen, nach dem auskühlen mit Puderzucker bestäuben

I have a recipe like that, too, where you stir apples into the batter. The cake turns out super moist and is really tasty. My mouth is literally watering just thinking about it.

I was actually planning to bake Ines’s quick bread this weekend. But now that I’ve seen what baking malt is good for, I’m going to wait until I get it delivered on Wednesday from our organic grocery store. By the way, it’s also easy to make yourself—I just don’t have any grains on hand right now.

Then tomorrow I’ll start a batch of bread with sourdough starter; I haven’t done that in a long time either.

Guten Morgen ihr lieben,

Ja ich bin heut schon frueh auf. Konnte einfach nicht mehr schlafen wegen Vollmond.

Hatte gestern wieder gebacken. Hab mal probiert mit den Aepfeln gleich unter den Teig. Schmeckt lecker.
Mein Kuchen ist jetzt etwas flacher geworden, weil ich noch Teig abgezwackt habe fuer den klitzekleinen Kuchen da im Hintergrund.
Mein Mann hatte gestern Geburtstag, da hatte ich die Idee. Ich mach so was gerne, andere zu ueberraschen, auch wenn wir nur zu zweit feiern mussten.

So, das sind - oder besser waren - meine Apfelwölkchen. Ich hab sie mit Vollkorn-Dinkelmehl gebacken und sie sind super lecker geworden. Die mach ich bestimmt nochmal. Wir haben diesen ganzen Teller voll heute verputzt. Mein Lieblingsmann ist auch begeistert. Danke fürs Rezept, Inge. :)

No cake this weekend. I don’t want to turn into a ball, after all. ;-)

Instead, I baked the Speedy Bread using Ines’s recipe—in a Römertopf.
Wow, it turned out super delicious! This definitely won’t be the last time I bake it. It turned out great with the liquid baking malt.

Lecker sieht dein Kuchen aus. 

Ich habe bald das Gefühl, ich mache nichts anderes mehr als Stricken und Backen.

Ich probiere immer wieder neue Rezepte aus. Hier ein Apfelkuchen mit Mandelblättchen oben drauf.

Quick question....
What kind of baking pans do you prefer to use? 
The classic kind with greasing and all that, or do you prefer the silicone ones?
I just saw some metal springform pans with glass bottoms, so you can serve the cake right on the platter and don’t have to turn it out. 
My husband just bought a silicone one that you can fold up; it comes away from the sides really easily and releases nicely from the bottom... 
But I always feel that cakes somehow look “artificial” when they’re baked in silicone. ...
What do you think???

Andrea und Petra, ich bin begeistert!!! Das sieht ja mega lecker aus. Vor allem das Karottenbrot interessiert mich ja sehr. Petra, verrätst du uns das Rezept?

Ja, mir geht es ähnlich - Stricken und Backen, das sind zur Zeit meine Lieblingsbeschäftigungen. Aber bald kommt dann der Garten dazu.

Stephanie, ich bin mit den Silikonformen nur bedingt zufrieden, denn es klebt halt doch fest. Deshalb bin ich dazu übergegangen, wieder ganz normale Formen zu nehmen, entweder mit Backpapier oder mit Einfetten.
Mit der Glasboden-Form und Silikonrand hab ich persönlich keine gute Erfahrung gemacht. Die hab ich mal geschenkt bekommen. Die sollte dann unbedingt auf einem Blech stehen. Mir ist nämlich unten was rausgelaufen. Der Teig war allerdings auch ziemlich flüssig bzw. fettig.

Vielleicht mach ich auch irgendwas falsch, weil bei mir trotz Silikon alles anklebt.
Da der Kuchen ja nicht in der Form bleibt, ist mir das egal, wie sie aussieht - sofern es funktioniert.

Ich danke euch. So ein Kuchen haelt bei uns nur 2 Tage.

Petra, Deine Kuchen sehen aber auch lecker aus. Osterplaetzchen waer ne super Idee. Was fuer Teig nimmst .du da?

Also ich habe noch die klassischen Formen zum Einfetten. Bin ja am Ueberlegen mit einer Gugelhupf Silikon Form. Wobei ich meine Muffins in diese Silikonformen backe, macht sich super, und da klebt nix. Die fallen schon immer von selbst aus der Form, wenn ich die rumdrehe.
Bei Springform und Tortenboden form, da kann ich mich damit noch nicht anfreunden.

Ja das stimmt, diese Zeit verbringe ich auch viel mit backen, kochen, aufraumen und Haekelzeug.
Heute war ja mal tolles Wetter fuer einen Spaziergang, und gleich noch Schlagsahne geholt fuer den Kaffeekuchen.

I’m thrilled when I see the amazing cakes and breads you all bake. I hardly get a chance to bake anymore, since there’s no one around to eat them...
I found another photo from when I was more active. They’re actually little pigs, but my friends said they looked more like dogs. Well, so they became “pig dogs.”

Marlies, your little pigs look so cute. You wouldn’t even want to eat them… to me, they’re just cute little dogs. What a great idea. My friend up north also bakes bread just for herself. She always uses half the recipe or freezes part of it. I love my homemade breads and cakes. You can’t buy any better ones.

I think I’ll bake my Easter bunnies for breakfast again this Easter. They taste great even when there are just two of them.

Those little pigs look great. I imagine they were sweet? The eyes made from raisins? So adorable.

I also bake for two people. I bake loaves with less than 500 grams of flour, and since we eat them for lunch and dinner (while working from home), I bake every third day. And even if it’s been four days, the homemade bread still tastes absolutely delicious. And when it comes to cakes, I always freeze a portion because we don’t eat that much of them. But even after thawing, most of it still tastes great.

First, here’s the recipe for my carrot bread. It’s delicious and moist.

bis auf das 1050er Mehl hab ich alles im Haus, obwohl...
ich schau mal ob ich das bei meinen "Italiano" Backsachen stehen habe. Die haben für alles mögliche verschiedene " Mehle" 😊👍 und ich ganz viel davon in der Speisekammer.

When it comes to molds, I still bake with the old ones—that is, glass or metal.

I’ve often considered silicone molds, but when I read about the harmful substances that can leach out as they age, I’m no longer interested. I once read a comparison of different muffin cups, and mine (from a Swedish store) performed very poorly. Since I want to move away from plastic and the like again, I’ve gone back to greasing and flouring the pans.

And here’s my recipe for my Easter cookies. For the eggs, I only used 2 whole eggs and 1 egg white this year. I’d already used the third egg yolk for brushing the cookies.
