Dear community,
how is the baking for Christmas going? 
Are you making progress?
What are you having this year / traditionally for Christmas?

For years now, we’ve been having raclette with a hot stone. We can hardly find two people who like to eat the same thing, so everyone can cook whatever they prefer, and we get to sit together comfortably for a long time.
Just the two of us on Christmas Eve usually have potato salad for him, pasta salad for me (I don’t like potatoes), and sausages on the side.

We’ve been having hot stone on Christmas Eve for years. It doesn’t require much preparation, and it makes for a very relaxed meal.

I’ve already baked two out of four different kinds of cookies.
I’ll make the rest next week.

We’re skipping the Christmas dinner because I’m vegan and my daughter isn’t.
I’m just making some ready-made meals from Frosta.

In the Christmas bakery.......

My favorite this year is nut corners

Nut corners
150 g flour1/2 level tsp. baking powder65 g sugarand 1 egg
mix into a thick batter. Add 65 g cold margarine and knead all the ingredients into a smooth dough. Roll out into a rectangle (32 x 24 cm) and spread with 2 tbsp. apricot jam (warmed). Then 100 g margarine, 100 g sugar, 1 packet vanilla sugar with 2 tbsp. water are slowly heated and melted (I did this in the microwave). Stir in 100 g chopped hazelnuts and spread evenly over the topping. You need to put an edge / cake pan around it, otherwise the topping will run off while baking. Bake it in the preheated oven at 175  degrees for 20 - 30 min. After that, let it cool a little, then cut the triangles. Warm 50 g couverture chocolate (again in the microwave) and brush one corner of the pastry.  

Maybe you feel like trying a new variety and would like to bake it sometime too

Hmm, I have the same recipe. I always make a double batch, which fills an entire baking sheet. You can never have too many of these—plus, while they’re supposed to last for days, in reality they’re gone in no time.

We’re all done with our Christmas baking—we have 3 Dresden stollen (800 grams each), two kinds of gingerbread, speculoos, butter cookies, and nut cookies. That should be plenty :-)
For Christmas, my husband wants to make a goulash that takes 2–3 days just to prepare and cook. He found the recipe on YouTube and said, “I’ll make this for us for Christmas.” I’m not sure yet what I’ll serve with it—pasta, rice, or potato dumplings would all go well with it :-) Add a tasty salad and we’re all set; we’re pretty much on our own for Christmas anyway.
