It depends on what I’m working on right now ;-) :-) but generally speaking, I’m pretty quick at it :-)

Good things take time...

When are you working quickly? How is that measured?

When I’m running out of yarn and I’m worried I won’t have enough, I work faster so I can finish before the skein runs out.

I think that’s purely subjective. When I “quickly” crochet a coaster for my mug using leftover yarn, it takes me about 15 minutes. 
My sister, on the other hand, takes 3–5 hours—she’s a beginner, and changing colors and following patterns is still very difficult for her. But even so, I think she finishes that same coaster pretty quickly.

I’m also familiar with trying to work faster before the ball of yarn runs out. It’s great to know I’m not the only one who feels this way.

Generally speaking, I crochet and knit pretty quickly, but sewing takes me much longer. And that rush to knit or crochet faster when you’re worried the skein might not be enough—I know that feeling too! 🤣
I’m always so torn when it comes to size. If I’m making small amigurumi, I end up wanting to make something big instead. But when I have a sweater on my needles, I want to finish it quickly and work on smaller projects. I think I’ve just found a good compromise—I’m making a patchwork quilt. Each square comes together relatively quickly, but the quilt takes a little time—I’m really enjoying it right now.
And when I feel like crocheting again, I can easily slip in a little animal here and there....

When it comes to knitting, I’m more of a slowpoke.
But when it comes to thread-art embroidery, my friends say I’m very fast.
By the time they’ve barely started, my pattern is already finished.
I think it’s just a matter of practice.
I’m currently knitting a sleeveless jacket, and it just won’t seem to get finished.
It’s the first piece I’ve ever made for myself.
I don’t usually like such big items.

Unfortunately not!
My mind is constantly racing, which means I have 1,000 ideas but can only bring a few of them to life. I think that’s a shame!
My notebooks are bursting at the seams… I’m off to do some crocheting again! 😅

For me, it’s the other way around—when I’m running low on yarn, I slow down. Maybe the yarn will change its mind and turn out to be enough after all. :-)

Otherwise, I work quickly, but I still have a hard time finishing anything.

For me, it varies.
It depends on whether the project is simple or complicated.
I know what you mean about the sweater. I’d like to finish that as quickly as possible.
