I’ve been busy yesterday and today. I prepared all the doughs yesterday and baked them today.

Four different kinds of bread for today’s celebration....

It smells wonderful in here.

Inge, your marble cake looks delicious, and even with whipped cream. I can’t do without it. Mmm, yummy. I’m getting hungry already.

Petra, your breads look really delicious too. What kinds are they? Seeded bread?

Andrea, those were 4 different kinds of bread; only one had flaxseeds and sunflower seeds.

I always bake with a wheat sourdough starter (which I keep in the fridge and reuse over and over) along with flour and whatever ingredients come to mind.

Most of the time I just use 405 flour—it goes well with everything.

There are so many 🍎🍏🍎 lying around in our orchards; nobody picks them up. So sad.

My husband thanks you all for your birthday wishes :-)

Since my birthday is next week, the family always gets together the weekend in between, and we celebrate both birthdays together. I already baked an apple cake today; tomorrow I’ll make an onion tart, and we’ll have pizza for dinner. If that’s not enough, I still have a cake base for a fruit tart lying around—it’ll be topped in no time and ready to enjoy :-)

Best regards, Inge

Thanks, Marlies! I added a lemon cake today because my granddaughter doesn’t like cakes with fruit that’s been warmed up. She’s a bit of a fussy eater, but what can Grandma do? She gets up early and bakes another one :-))))

Exactly, Marlies—grandmas are just like that :-)

My husband baked one of my favorite cakes for me today—a marble cake with chocolate icing—and I also topped a fruit tart, because my daughter has diabetes and can’t really handle too many sweets, but my grandson sure can :-)

My husband thought it was taking too long to wait until the end of the month to start baking cookies, so he tried out a recipe today—oatmeal cookies.

Oatmeal Cookies:
200 grams butter, 200 grams sugar, 1 packet vanilla sugar, 1 egg, 250 grams rolled oats, 100 grams flour, 1 packet baking powder.
Mix everything well, form small mounds with a teaspoon, and place them on a baking sheet. Bake at 200°C (top/bottom heat) for 10–12 minutes.

Love, Inge

Inge, I like the idea of baking cookies. Yours look delicious.

I had a baking day too—I had a lot of sourdough starter on hand, so I baked a pumpkin loaf, a loaf with pesto, and a wheat loaf with plenty of whole grains.

Hmmmm, everything here looks so delicious. Cinnamon rolls—I’d love to see the recipe for those, Petra. We like them, too.

I just baked the apple clouds again (recipe by Inge). But since I also wanted something Christmassy for afternoon tea, I added 1 tsp of gingerbread spice and 2 tsp of cocoa to the dough.

They taste absolutely amazing!! I like this version so much that I’m going to stick with it during the winter. Next time, I’ll bake in a few cocoa nibs as well.

Here’s a photo:

My favorite guy diced the apples so beautifully into tiny cubes—he has the patience of a saint.

Apple cake and cinnamon rolls—I’d have a hard time choosing between them.

I baked my first stollen using my sourdough starter. The annoying thing is that they have to mature first… and I’m just soooo curious to see how they turned out.

I’d like to bake a Stollen with my wheat sourdough starter next week and I’m already looking forward to it. Yours must have turned out delicious—are you staying strong and letting them rest?

Monika, I’ll have to remember your variation on the apple clouds.

As for the cinnamon rolls, I can share the original recipe with you. But that’s not how I baked them. More on that after the recipe

300 ml lukewarm milk
35 grams yeast
one packet of vanilla sugar
1 tbsp sugar
1 tsp salt
70 grams butter
480 grams flour

Let the dough rise once for 30 minutes, then roll it out, brush it with 50 grams of melted butter, sprinkle sugar and cinnamon on top, and roll it up. Place the rolls in a baking dish and let them rise again for 10 minutes. Before baking, pour 100 ml of cream over them. Bake at 180 degrees for 25 minutes.

I bake everything with my wheat sourdough starter and try to replace animal-based ingredients.

So I had 150 grams of wheat sourdough starter.
2 tbsp sugar,
1/2 tsp salt
70 grams sunflower margarine
480 grams flour
300 ml oat milk

I let this dough rise for 15 hours at room temperature. Then I made the rolls, added margarine, sugar and cinnamon (don’t skimp), rolled them up and let them rest again for 3 hours until they had risen well. Then I poured plant-based cream substitute over them and put them in the oven.

not baked, but at least just as delicious, if not more :-)))))))))
you need silicone molds
slivered almonds
block chocolate
rum flavoring or arrack
Melt the block chocolate in a water bath, lightly toast the almonds in a pan, add 2-3 drops of rum flavoring or arrack to the melted chocolate. Fill the silicone mold about halfway with the toasted almonds, then pour the melted chocolate on top; it works quite well with a sauce spoon that has a narrow spout at the front. Then put the whole thing in the refrigerator for a few hours so the chocolate firms up again, then remove from the mold and enjoy—these are so incredibly delicious [yellow-lol]

Best, Inge

Yesterday I was in the mood for a light, delicious nut cake, :-) so I headed into the kitchen and baked one for us. My husband was already licking his lips while it was still in the oven :-)
Normally, you’re supposed to put a glaze on top, but in the summer that’s just a *messy* business, so I always skip it.

Inge, it definitely looks delicious. I’ve never tried a walnut filling before. That’s something to try next time.

I also baked diligently (using a stand mixer and my left hand) for our Easter bonfire yesterday:

sponge cake, Easter bunnies, and a loaf of bread

Unfortunately, the rain came along with the guests, so our Easter bonfire wasn’t quite as cozy as we’d planned.

So you can enjoy the cake too, here’s the recipe (GDR Baking Book, Verlag für die Frau).
For my pan, I used half the ingredients; otherwise, this is for a baking sheet.

50–100 g margarine
6 eggs (I always use 5, that’s enough) — yolks only — beat the egg whites and fold them into the batter at the end
300 g sugar
2 lemons (I use bottled lemon juice, plus a little ready-made grated lemon zest)
1 kg dry quark
100 g semolina (powder)
1 packet baking powder
1 tbsp flour
Pinch of salt

Cream the margarine, egg yolks, sugar, lemon juice, and grated zest until fluffy. Beat in the quark passed through a sieve, the semolina, and the baking powder sifted with the flour.
Gently fold in the lightly salted, stiffly beaten egg whites.
Bake for at least 50–60 minutes (depending on the oven) at medium heat until golden brown.
Enjoy!

Inspired by Andreas’s delicious quark cake, I baked a whole bunch of little quark cakes yesterday and preserved them in jars. I topped the crusts with various fruits (strawberries, raspberries, mandarins) and spread the quark mixture on top. Baked and preserved this way, they’ll last forever—but not in my house. I’m a huge cheesecake fan, after all. You put in the effort once and get 20 little treats to enjoy.

I don’t bake cakes anymore—my husband was the cake fan here; I’m not really into sweets. I’ve already given away most of my baking pans.
However, I did bake a loaf of bread once. Have you heard of Bäckers? They have various bread mixes and a matching silicone pan (though, theoretically, you could also bake the bread in a tin can or a loaf pan)—which results in smaller, rounder loaves that I can easily finish on my own as a single person.
I tried the spelt roll—it was very quick and easy to make, and really delicious.
