Saxon Quark Fritters

They’re a tradition in our family, so once a month we have these delicious quark fritters. The recipe comes from my grandma, and when she could no longer make them herself, I took over making the recipe from her so she could continue to enjoy them for a long time—and of course review them too :))

Recipe for 20 pieces

Boil 1 kg potatoes with their skins on the day before; after peeling, chill overnight
1.5 kg quark
3 eggs
300 g flour
1 packet of raisins; if you don’t like them, you can leave them out
2 pinches of salt
3 tbsp sugar, optional sugar substitute or honey
Oil for frying. I prefer canola oil

 Grate the potatoes and put them in a large bowl, then gradually add all the ingredients and knead well with the dough hooks. Shape into a loaf on a floured surface and cut into slices. Heat oil in a skillet/pan and fry on both sides until golden brown....the oil should be kept at a constant medium heat.

We like to eat them with applesauce.

I know those too. I always have to bake a huge batch. My recipe is the same, without raisins. But I usually just wing it when making the dough... really delicious, hmmmmmmm!!!!!!!

Petra, I have to bake for three families, too, haha—my parents, my daughter and her boyfriend, and us....you end up smelling just like a Quarkkeulchen yourself. Hugs

With such a small amount of sugar, I assume this is more of a savory dish?
I’ve never tried it before.

Josefa, sugar is still sprinkled on top when eating, so don’t add too much to the dough itself—otherwise it’ll be sickly :)

OK. I can only vaguely imagine how potatoes are supposed to work in a sweet dish.

This works, but it’s also meant for lunch, just like egg pancakes.

Josefa, plum dumplings, and apricot dumplings are also made with potato dough and have a sweet flavor.

Sweet dishes made with potatoes or potato dough aren’t really my thing,
but it’s nice to see that you’re having so much fun with them. :-)

Ines, that’s sure to be super delicious, and I’ll make a note of the recipe. I just need to find a substitute for the quark, since we don’t eat dairy products. 

Preparing potatoes this way is a great idea. It makes me think of potato pancakes, which you can also eat either with applesauce, so sweet, or with something else.

Monika, if I remember correctly, there’s a vegan quark from a company called a...o—that definitely works. For this recipe, I still use wheat flour because I don’t really like the taste of spelt in it.

Ines, I know I’ve already baked a delicious cheesecake with vegan quark. It’s definitely worth a try.

I remember Quarkkäulchen from years ago. 
You can also mix raisins into the dough, depending on your taste.

I could make something Saxon sometime too.

@ Ines: What kind of potatoes should you use for this? Waxy or floury?

Ursulapetra, it doesn’t matter in this case because the potatoes are mashed anyway, but floury potatoes are of course preferred :)
