Pickled Eggs

Today I tried my hand at something new…pickled eggs.
Our chickens are laying sooo many eggs right now that we can’t keep up with eating them and giving them away. So I had the idea to just try pickling some.
I’m curious to see how they’ll taste.

Are the eggs raw or hard-boiled? Should I look it up online tonight, or are you just going to wing it?

They’re hard-boiled.
I simmered down a mixture of vinegar, water, and spices.
There are all kinds of recipes, including many that call for white wine. I used vinegar essence, though (mixed 1:4 with water).

Pickled eggs—they’re delicious—used to be available at many garden restaurants. I’ve never made them myself, but every few years we’ll buy a jar on a whim.
