Binding in Sewing + Finishing Edges

Dear users, dear designers,
how does binding in sewing work? What is the difference from finishing edges?

Binding can be done with bias tape, i.e. the hem edge is then bound with bias tape
as here on the collar, but you can also bind a hem just with the serger, for example if you make a rolled hem, like here on my shirts. You can also easily make the rolled hem with a regular sewing machine: set the zigzag stitch close together and then gently pull the fabric while sewing, then the hem rolls like in the picture. I liked these rolled hems quite a lot for a while.

When hemming, the fabric at the hem is usually folded inward by about 2.3 to 3 cm and a hem is sewn, and depending on the fabric and garment, such as a coat or evening dress, either by hand or with the machine
