Marion’s Pretzel Recipe

We're all out of pretzels. Time to make more. Instead of pretzels, I decided on the spot to make rolls out of the dough. We'll have them with coffee. I'm curious to see how they turn out.

Andrea, those look good too. Well then, enjoy them later.

I usually make a braided loaf with this dough—you can even add raisins to it.

If you're interested in the recipe for the
New Year's pretzels, it's a regular yeast dough

• 500 g flour
• 40 g yeast   or   1 packet dry yeast  g
  
• 60 g sugar
• 1 pinch of salt
• 1 egg
• 100 g softened butter
• 1/4 l lukewarm milk
• a little lemon zest or flavoring
  

I baked them at 160 degrees for about 45 minutes with convection,
brush with egg beforehand so they get a nice color.

You can also simply bake a braid from this dough.

Yeah - the pretzels are super delicious. I baked them yesterday too and split the dough into pretzels and a braided loaf.

I made a whole-grain version out of it.
Replaced milk with oat milk
Replaced sugar with honey
Replaced flour with whole-grain spelt flour
I brushed them with oil - that made them very crispy
fresh lemon zest then gave it the perfect mix

Next time I'll add raisins.

I’m really glad you posted the recipe separately again.
But remember, I forgot the yeast

40 g yeast or 1 packet of dry yeast still needs to be added.

That would be 180 degrees with conventional heat.
