how can you make stitches in crochet and knitting nice and uniform?

By keeping the yarn tension even. That’s the key.
And, of course, using the right needle size—with a pointier or rounder tip, depending on the yarn…
You also need to make sure to insert the needle carefully through the stitches—especially with multi-ply yarns—so that you “pick up” all the strands.
Often, it’s just a matter of practice.

First and foremost, of course, through lots and lots of practice! The more and the more often you knit/crochet, the more you get to know your very own yarn tension, and over time the stitch definition becomes more even!

Then the needle size and yarn have to match! Even small size differences in the needle used can make a huge difference in the stitch definition! Nowadays there are even 1/4 sizes for knitting needles (I don’t know about crochet hooks), but you do have to take the time to make knitting/crochet swatches to see which one gives you the most even stitch definition.

And then there’s Trick 17: SOAKING WORKS WONDERS! Put the finished knitted or crocheted piece in water and let it soak. This relaxes the yarn and makes the stitch definition much more even!

Thanks for the great tip—I didn’t know that. :) But I’ve also found that the fabric becomes firmer and more even after washing, especially with pure cotton.
