I always bind off with a crochet hook—it’s quick and pretty easy to do.

I always cast off using a larger knitting needle to make it looser—especially for cuffs.
I use a crochet hook to cast off when I’m joining two pieces of knitting. It looks great and doesn’t leave the usual seam.

The most important thing when binding off is to bind off the stitches very loosely so that the knitted piece doesn’t pull together.

For ribbing patterns, I cast off the same way I knitted the pattern.
For 1 knit stitch, 1 purl stitch, I cast off 1 knit, 1 purl.

You can also bind off elastically by knitting one stitch, making a yarn over, and knitting another stitch. Then pull the first knitted stitch and the yarn over over the second stitch and bind off. This works very well for cuffs and necklines, but also for blankets.
