Easter Meal: Did you have a nice meal?

what did you eat over the holidays?

Oh yes, we were really spoiled. My niece’s husband loves to cook—and he’s absolutely fantastic at it. Among other things, we had a roast beef that was unlike anything I’ve ever had before. Not the classic kind, but more like an entrecôte or something similar, with a really great sauce and bread dumplings.

We had a delicious and very tender pot roast with dumplings and a beet and apple salad, and on Monday we had a tasty vegetable rice stir-fry.

I made three beef roulades with a delicious sauce, potatoes, and braised bell peppers.
Enough to eat for two days, and I froze the rest.
I had the leftover sauce with pasta on Tuesday.
